I've looked around and am having problems finding the precise instructions on the disassembly that I need.

Please read the tutorial Intel NUC8i7BEH Disassembly. It describes how to remove the board from NUC case. After removing the board, the CMOS battery can be replaced. While installing the new battery verify that the wires polarity is the same as in the old battery.
