Which less file do I need to modify so <table>...</table> i create will remain when i go to design mode?

My advice is not to touch any of the Designer .less / .css files. Just make your own table.css and bind it into the doc. (If you make it the last CSS file, it will override the earlier ones).

Then put your own CSS there.
