Hi,
We have had similar issues we are using the Intell X710. Every few weeks since upgrading to ESXi 6.5 the networking on one of our hosts has been locking up. We stumbled across the below article which described the issue well and also mentions disabling the i40en driver.

Note we were on firmware version 1.3.1, did this issue get resolved with an upgrade to 1.4.3 NIC Driver for Intel Ethernet Controllers X710?
Looking in some forums some people ordered new nics to get around the issue.

Driver version 1.4.3 does fix the issue and if you still experience problem after upgrading to 1.4.3 , please let us know. Thank you.
