intel 82599ES to pull streaming A/D data

I am thining of using the intel 82599ES to pull streaming data from two 10 bit A/D running at 200 MHz clock rate so 2G bit rate (plus overhead) per A/D.

I would use a dedicated FPGA to implement the best packet protocol to feed the data.

The card would be used on a Linux system and I am happy to see most of the post are about working with Linux.

Can you provide any comments on this and which protocol would be best to start with?
