I've got a Dell Inspiron 3501 Laptop with Intel Iris XE Graphics.
I've also got a Samsung Ultra Wide monitor which supports up to 3440 x 1440, but the graphics driver wont set above 1920 x 1080
I've got the latest driver from Intel and installed the Arc Control software.
Is there anything else I can try

Just to inform you that we supply generic versions of graphics drivers for general purposes. Computer manufacturers might have changed the features, incorporated customizations, or made other changes to the graphics driver software or software packaging. To avoid potential installation incompatibilities, we recommend that you check first with your computer manufacturer and use the driver software provided by them.

How much RAM do you have installed in your laptop?

After reviewing the Specification, it looks to me that your laptop has video resolution limit (as mentioned by @MUC above).
