I have an intel NUC gen 8 and want to upgrade the physical graphics card

It has a AMD RADEON 540X Series.

I wanted to upgrade it without buying an entirely new NUC.

Maybe for $500.

Instead of $1000 for new.

Is this possible?

Unless you get a new NUC, you are stuck with the amd graphics you have.
