Which specific i7 processor? They are now 6 generations of them and most generations require a unique motherboard design.
Also, this forum is for the support of Intel's desktop board products. Are you looking for an Intel board product or just a board that supports your Intel processor?

http://processormatch.intel.com/Processors/CompatibleProcessors?componentName=DZ87KLT75K http://processormatch.intel.com/Processors/CompatibleProcessors?componentName=DZ87KLT75K - 32GB is max and only 4th gen of i7
DX79 series boards supports more RAM, but unlikely you will find any compatible CPU at reasonable price.
Intel went out of desktop motherboards business in 2013.

So check the LGA2011-3 (X99, Haswell-E) boards from ASUS or MSI, and check their compatible CPUs lists. They allow up to 128 GB of RAM.

Based upon the planned usage model, I agree with JFFulcrum. For multiple VMs, you are going to want lots of Cores and lots of memory. I thus believe that one of the Haswell-E Xeon derivatives makes the most sense. The Xeon derivatives support 4 memory channels (instead of 3) and thus can support up to 8 DIMMs that provide up to 128GB of RAM (with appropriate motherboard). Top processors available are: Core i7-5960X (8 cores), Core i7-5930K (6 cores) or Core i7-5820K (6 cores). Asus, MSI and Gigabyte all have top-notch X99 motherboards with sockets for up to 8 DDR4 DIMMs.

Edit: To see available motherboards, go to Amazon and do search with "x99 quad-channel".
