I am a complete newcomer to digital electronics. The book I'm reading makes reference to UP-2 education board the DE1/DE2 development and education boards. In layman’s terms, could you please explain the differences between these? I've already read Altera's site/descriptions but they're not very helpful to a newcomer.

The UP2 is a CPLD development kit, whereas the DE1/DE2 are FPGA-based.
DE1 is essentially a cut-down DE2 board without a few of the extra peripherals contained on the DE2.
