Before I buy one, is there a way to add a dual monitor and extend the desktop?
It depends upon which ICS you are talking about. The Core m3 processor in the CC ICS should have the oomph to handle a USB 3.0-based graphics adapter.

I just wanted to let you know that based on the specifications, the compute sticks do not support dual display, all of them support single display, as you can confirm on the following link, under graphics specifications:
The adapter is always an alternative, but that type of configuration was not tested by Intel, so it is not for sure that it will work properly.
