Hi Alexisbacam,

I would suggest you to check the Intel Edison WiFi Guide. It has all the necessary information to set up a connection. Section 4 contains most of the steps that you'll need.

About the IDE of choice, you'll have to evaluate your needs. If you have experience programming in C/C++, the Arduino and Eclipse IDEs are great options. If you have more of a Javascript background, the Intel XDK would be more suitable for your project.

Here's a useful thread about sending an email with the Intel Edison, /thread/55180 https://communities.intel.com/thread/55180.
