I think that there are probably many humidity sensors that work well with the Galileo. I have successfully interfaced a Honeywell HIH-5030 and it is relatively simple. The easiest solution, in my opinion, is to use one with a voltage output (as is the case with the HIH-5030). In this fashion, you basically are simply hooking it up to an A2D pin and, along with some temperature correction, that's pretty much the whole thing. I have been thinking of posting the 'experience' with code, but will likely not get to it for a while.
The Intel® Galileo Board has I2C, SPI and UART interfaces so you can use devices with this kind of interfaces to communicate them with the board. Also you have the option to use the analog pins (ADC) to connect analog sensors with voltage output, just be careful with the voltage limits of the board.

I have a project of Temperature and humidity sensor (using IC - not capacitive / thermistor sensor) - which come in form of a probe and a corresponding Arduino shield.
In fact I want to test the compatibility of my project with Intel Galileo - which supposedly can accept Arduino compatible shields.
Is there anyway I can check with you or anyone to advise ?

It is true that the Galileo board is compatible with the Arduino Shields but there is some shields that may not work correctly. In order to know what are the tested shields at this moment please check this document: /servlet/JiveServlet/previewBody/22995-102-1-26777/GalileoShieldTestReport_330937_001.pdf Shield Testing Report.
The document has the official test reports of some shields but this doesn't mean that another shield will not work. There are new shields almost each week so I encourage you to test your shield and share the results with the community. Have a nice day!
Thanks for your response, we would like to test the compatibility for sure - the issue is we don't have Intel's Galileo system - and not sure we can justifying to the boss for buying it with the main purpose being to test the compatibility.
Is there anyway Intel can help us achieve this - this would for sure help Intel's proliferation in the Maker / DIY community.

I'm looking for any humidity ( doesn't need to have humidity & temp) sensor that I can connect directly into the Seeedstudio Grove shield (that is attached to the intel edison arduino board). I've already read that the DHT11 / DHT22 has some issues and only a workaround exists (since I admit I'm not really technically-skilled to do any HW engineering / soldering / DYI work etc.,as I'm more into SW side of thing, this is not the right solution for me...)
