I'm looking for any humidity ( doesn't need to have humidity & temp) sensor that I can connect directly into the Seeedstudio Grove shield (that is attached to the intel edison arduino board). I've already read that the DHT11 / DHT22 has some issues and only a workaround exists (since I admit I'm not really technically-skilled to do any HW engineering / soldering / DYI work etc.,as I'm more into SW side of thing, this is not the right solution for me...)

This guide has the shields that have been tested with the Galileo and Edison board. For each sensor you can see general information of the sensor, hardware summary, links to datasheets, connection diagrams and code. This guide can be helpful since it shows which pins need to connected to the board, thus making the hardware connections part of the project easier.
Another important link to check out is this one http://iotdk.intel.com/docs/master/upm/modules.html upm: UPM Libraries . This is a list of the supported sensors. Each link also comes with a description of the sensor and code.
thank you for your answer. I actually did have a look at the Edison shield testing report, unfortunately there are no humidity sensors mentioned in the document.It's also quite outdated (last update from October 2014).
I decided to go with the HTU21D. However, I see that it's inevitable to do the soldering / attaching the HTU21D breakout to the breadboard...
As I'm really new to all this, would you recommend any soldering kit? I'm probably out of topic here, it's just any help would be highly appreciated.

Then hopefully I'll be able to solder the header onto the PCB of the sensor. What's daunting me is the breadboard. According to the following demonstration, 2 pins are using row J on the breadboard and the other 2 pins use row I. Is it just for aesthetic reasons and can I plug all 4pins to just one row, e.g. row J?

Yes, that is for aesthetics and help the person watching the diagram have an easier understanding of the circuit. In a breadboard you can have all the cables in the column J. You'd just have to move the black and blue cable one column to the left.
It'd be something like this:
Red: Row 14 column J
Black: Row 13 column J
Green: Row 12 column J
Blue: Row 11 column J
