There are two screw holes on the bottom of the NUC. I want to know what screw size I need for those holes.

It's the NUC 8i5, and yes those screws.

I understand Intel sells a mount, I do no want to use that and the screws in that kit are not long enough for my needs. Therefor I need to buy screws of the same diameter and pitch but different length. What are the diameter and pitch of those screws?

You have all information in the link from my post above. You nee click on "Installation instructions" . The four screws used to attach the Vesa panel to monitor are M4 size. The two screw attached to bottom of NUC (to hang the NUC on the panel) are M3 size.
The M4 is a metric screw specifying a nominal diameter of 4 millimetres ; and standard coarse thread pitch defined as 0.7 millimetres .
The M3 is a metric screw specifying a nominal diameter of 3 millimetres ; and standard coarse thread pitch defined as 0.5 millimetres .

In the link Leon provided, it states that the screws are m3 and m4, standard metric sizes.
