I am looking at using two NUC11PAHi5 units in a piece of equipment. Our equipment runs on 24VDC. I will be using a 24VDC to 19VDC adapter. In order to properly do this, I have a couple of questions:
1. It looks like the barrel jack is a 5.5mm OD x 2.5mm ID. However, I can't seem to get verification on the depth. Will either a PP3-002BH or a PP-2555TL-M barrel plug work?
2. What is the maximum current draw for one of these NUC units? I need to know in order to specify a proper 24VDC to 19VDC adapter.

To provide the Intel® NUC with power, you need a 19V 90W power adapter with a 5.5mm outer x 2.5mm inner, as you also mentioned in your post. However, to provide you with a proper response, I would request more details about what you are looking for.
