I am thinking of connecting an eGPU (1080 Ti) to its thunderbolt 3 and was wondering if I can get the full potential out of this graphics card.

The new feature for the upcoming series will be Radeon™ RX Vega M GL graphics.
Essentially a 1080 Ti will be compatible (electronically and physically) through Thunderbolt 3 with our unit, however we do no guarantee the best performance/compatibility or full potential, your results may vary, due to the fact that the unit is no intended to work with this type of cards (GTX 1080 Ti).
As soon the product is released we should have a list of compatible/tested peripherals such as the ones listed on https://ark.intel.com https://ark.intel.com for another older NUC models.
Our best recommendation is to wait until the product is fully released in order to determine the compatibility of the product with this kind of peripherals.

Thunderbolt 3 is four lane PCIe 3 while the 1080Ti supports up to sixteen lanes. First glance means limit to 25% of capacity. So no, technically you can not get full potential from a Thunderbolt connection. Thanks for the useful link. What I'm concerned now is that the CPU might bottleneck the connected GPU compared to a desktop CPU like the i7 8700.

It doesn't list anything related to eGPUs.
Why would it? The unit is designed to present you with a much, much better video solution so you can avoid having to resort to things like eGPUs....

The integrated GPU is good for 1080p gaming mostly.
