In theory, any of the NUCs would work for this usage model. I might suggest that you get at least a Core i3 processor, however.

Any NUC should do fine for this, subject to Zoom's minimum requirements. If the NUC will be placed far from a WiFi access point or put inside a cabinet (no, really, I don't recommend that), you might be better suited getting a USB WiFi adapter with an external antenna that will afford you higher gain to ensure a better signal.
Of course even that will be subject to congestion on the WiFi and/or internet connection. If you're in an office and have 30+ users on a single access point, WiFi will be your performance bottleneck. If you're in an office and have engineers uploading software builds, or you're at home and have kids watching Netflix in the other room, the internet connection will be your bottleneck. Neither of these can be fixed by having a more powerful computer though.
