I have tried changing the power settings to never for all but the display. But once the display goes to sleep I cannot wake it.

- Is your bios set to default settings?
- Is Deep S4/S5 enabled in bios? If yes, please disable it.

I simply disabled Monitor Sleep. That has worked for me with every NUC model.

Bios is set to default setting and S4/S5 is disabled.
