I have just purchased a BXNUC 10i7FNH 1. It was purchased for an application of running 3 monitors as extended display. I was also sold a Startech TB32DP2T to plug into the thunderbolt socket. When all plugged in the NUC only shows one monitor.

I have installed the Software Bundle, have windows set up but the extended displays section does not show and the monitors via Thunderbolt seem to be invisible at the moment.

I believe what you need is a TBT-compliant MST Hub. That is, a USB-C-to-2xHDMI or (better) USB-C-to-2xDP. Remember too that, because you are splitting the bandwidth of the DP 1.2 stream embedded in the USB-C connector, while it will support two 4K monitors, it will do so at only 30Hz.
