Intel NUC as a IOT Edge appliance

Hello Folks

I am considering using Intel NUC system as a IOT Edge gateway appliance in an industrial setting. My question - Is there a readily available NUC system with hardware raid that i can purchase from intel or any of its partners ?

Also I am planning on using one of the linux variants to run on NUC. What is the recommended Linux port for NUC? Ubuntu , arch linux ? what has been used if  for a production deployment along with NUC.
