Between the time I ordered my NUC10I7 and delivery, it seems Intel removed the 3.5mm audio jack. Great.
Trying to use the USB C port, but the system is not smart enough to know I have plugged in a USB C to 3.5mm cable, which is then plugged into a speaker. I'm thinking I need a bona fide USB to audio device that the system can "discover" - like the old school Turtle Beach USB audio device?
Other than saving maybe $1.49 by removing the audio jack, this sucks; I now need to dedicate the USB C to audio; for which I can find no documentation for; as well as need to spend more $, and more importantly, more dam time. The Thunderbolt port is being used for a 2nd display, so I cannot use that.
One step forward and 2 steps back...

In order to review this further, could you please provide the following details:
1- Full/exact model of the Intel® NUC? (For instance: "NUC10i7FNHAA"... or "NUC10i7FNKP"... etc.).
2- Details like brand and model or a link as a reference of the "USB-C to 3.5mm cable" that you are using. Also, did this cable include a CD or download link with drivers?
3- Operating System version:
