Is Intel® Wireless-AC 9560 compatible with Hades Canyon NUC8i7HVK?
The product specs page for 9560 and 8265 I see some differences in connector interface. For Intel 9560: Connector interface: CNVio, for Intel 8265: Connector interface: M.2: PCIe, USB, or UART (M.2 1216 only).
Intel's wireless solutions are all designed to support the M.2 Type E interface. The connector on the HN/HV board is (also) a M.2 Type E interface, so it is compatible with both of these solutions in this respect. The design of the HN/HV board allows for the use of M.2 2230 wireless solutions, so again it is compatible with versions of both of these solutions. M.2 1216 modules are designed for direct mounting onto a board, so this isn't what you want.

Even though you can insert these CRF to a standard M.2 Key E socket, they are only compatible with a system designed with the CNVi. Contact your system or motherboard manufacturer to verify compatibility.
Is the Hades Canyon NUC8i7HVK compatible with CNVi technology?
Well, since the AC-8265 is what ships with the HN/HV NUCs and the AC-8265 is a standalone solution, so I would presume that the answer is likely no, there is no support for CNVio in these NUCs. I reviewed the TPSs for these NUCs and found no mention of CNVio at all, so my presumption is likely the case. Still, I will talk to the reps and get a for-sure answer.
I was looking at the AC-9560 also, I wondered why the Hades Canyon would ship with the AC-8265 instead of the AC-9560.

"Recommended wireless solution for 8th Generation Intel® Core™ processors"
Since they are calling the Intel® Core™ i7-8809G an 8th Generation processor, I would expect the AC-9560 to work, but wouldn't be surprised if it didn't, so I am also awaiting clarification.
Looks like it is supported on Gemini Lake and Cannon Lake only at the moment. So it is not supported on Hades Canyon. Kaby lake G is listed as an 8th Gen CPU but is using a 7th Gen core so it should not really be thought of as 8th Gen.
