I want to set a password and disable boot from usb and a few other settings on many NUC pc's. I am looking to automate changes in the bios config process. Any help is welcome.

Intel provide a utility called Intel Integrator Toolkit (ITK) that is used to automate the configuration process. This utility is run in the UEFI Shell environment, so can be used regardless of destination O/S.
ITK can be downloaded here: https://downloadcenter.intel.com/download/26307/Intel-Integrator-Toolkit.
User's Guide is here: https://www.intel.com/content/dam/support/us/en/documents/mini-pcs/intel-integrator-toolkit-user-gui....
Other useful page: https://www.intel.com/content/www/us/en/support/articles/000023875/mini-pcs.html.
Hope this helps,

For BIOS settings, what you do is make the changes, via BIOS Setup (Visual BIOS), on your "gold" system and then import this system's setting into the file that you will use to set up the other systems (see section 2.3.1.4 of the User's Guide). Alas, there are two areas that are not covered, namely passwords and boot order. Because of security requirements, passwords cannot be replicated in this manner.
