I install the following update, 126.96.36.19999, this morning and my NUC could no longer detect two displays and the same content was displayed on both. Reverting to what I had previously, 30.101.1191, got things working again.

- Download the Intel SSU https://downloadcenter.intel.com/download/25293/Intel-System-Support-Utility-for-Windows-
- Open the application and select "Everything" click on "Scan" to see the system and device information. By default, Intel® SSU will take you to the "Summary View".
- Click on the menu where it says "Summary" to change to "Detailed View".
- To save your scan, click on "Next", then "Save".

Just curious, bu insstalling the universal driver, does it cause some confusing with Windows/Intel Driver & Support Assistant about your update status? Previously when I tried to install a universal DCH driver (some months ago), the driver will later get "downgraded" back to the official NUC one.

Would be happy to share the info, but is there somewhere I can send the Intel SSU results? Since it contains MAC and serial numbers I rather it not be published openly.
FWIW, mine's a NUC 11 kit i7: NUC11PAHi7 (not totally identical to the OP's). Windows 11 Pro. NUC drivers/software fully updated.
Just to further add on.
Yesterday, when the Intel® Driver & Support Assistant webpage showed an update for the graphics driver, the "Learn more about this update" led to a page that listed GFX-Win11-188.8.131.5299.zip ( know because I still have the downloaded file). But the same link today goes to Intel® Graphics DCH Driver for Intel® NUC Kit 11th Gen listing GFX-Win10_11-184.108.40.20629.zip for download.
I tried this new GFX-Win10_11-220.127.116.1129, installs fine. The Intel Driver & Support Assistant still says I have an update. I suppose "18.104.22.16899" is indeed newer than "22.214.171.12429".
It seems Intel has removed 126.96.36.19999, and instead listed 188.8.131.5229 dated 16/12/2021.
I have already installed the generic 184.108.40.2061 driver and when trying to install 220.127.116.1129, the installer says I have a newer version already installed. How can 1191 be newer than 9929??
I think clearly Intel must have mucked up their upgrade.
Just an observation: The GFX-Win10_11-18.104.22.16829 I installed manually feels not as "smooth". Window animations clearly stutter, definitely worse than the 22.214.171.12435 verrsion I had originally.
I apologize for the inconvenience, we got a few customers reporting this issue and we have mixed results when trying to replicate so we are removing GFX driver 126.96.36.19999 from the Download Center, please stay on version 188.8.131.521 https://www.intel.com/content/www/us/en/download/19344/intel-graphics-windows-dch-drivers.html.
What are the differences between these two driver versions?
Also can I take this opportunity and ask why two driver branches? One generic DCH driver and one NUC specific?
Why are you asking NUC customers to stay on the generic DCH driver when a revised version of the NUC specific one is available?
The reason for having "two different" drivers is simple: one is the generic driver provided by the Graphics Team and the other one we have for the NUC systems is basically the same driver but tested and validated by the NUC team for NUCs only. Having said that, the NUC driver branches from the generic DCH driver.
I asked customers to run the latest generic because I tested 184.108.40.20699, replicated the issue, and got it resolved by loading the generic 220.127.116.111, I should have recommended version 18.104.22.16829. I guess I tried to come up with a solution as fast as possible.
