Hello,
I have a NUC11PHKi7C which is suffering time to time of input lag (mouse and keyboard). I've read around old post regarding input lag problem with Nvidia graphics cards, but I don't have found a solution yet.
Nvidia drivers are the lastest updated from Nvidia app.
I'm not completely sure if the lag is there after the Nvidia card is used instead of the embedded intel video card, but I have that suspect.
The problem is more frequent or noticeable when file explorer is open and working on moving files, but it's not always laggy.
Has anyone a similar problem and found a solution?

I'm assuming that you are using wireless mouse + keyboard, connected to NUC with USB Wireless Receiver. If this is the case, try to insert this receiver into front USB port or even better in a distance from the NUC - on USB HUB or using USB Extender Cable (this is an example only).

Yes, correct. I use a Logitech Unifying receiver.
Using the front port is just for shorter distance/less interference?
In another nuc (10th gen not 11) I have a similar configuration but no problem at all.

Possible solution are to use a long extension cable, or using the internal USB2 port via an adaptor.

The long extension cable is for reducing interference putting the receiver far away? Would a USB hub with 2.0 port help?

I used the extension cord. The problem still appears randomly, so maybe it was only partially determined by an interference.
