I've had a random restarting issue (no errors and totally random) with the NUC I have pretty much since I got it. I replaced the power supply (20v) which came with it and the issue went away.
I have however discovered that the power supply was working fine all along. The replacement power supply I bought was 15v and it looks like anything over 18v causes my NUC to randomly restart.
I can work around the issue by simply never using a power supply over 15v but something is definitely not right so I thought I'd post this finding.
System:
NUC7i7DNBE
Ubuntu 18.04.4, kernel 4.15
120GB Corsair Force MP500 M.2
8GB (2x4GB) Corsair DDR4 SODIMM Value Select, PC4-17000 (2133)

- What BIOS version do you have?
- What are the full specifications of the second power supply?
- Is this a specific project?
- What SA does the NUC have?
