I know this has been discussed before, but any hope of getting this fixed? Or should I just turn off the HDD light (or accept that it's just faulty)?

Whats the part number for the storage device?
Here is our compatibility list <http://compatibleproducts.intel.com/ProductDetails?activeModule=Intel%C2%AE%20NUC#> for the Intel® NUC Kit NUC8i7BEK, please refer to it, If the drive is not that there it means we have not validated it but it may still work properly.
If the drive works well but the LED is always "on", I would recommend checking with the drive manufacturer for any firmware update that may fix this issue.

Sadly, it's not on your list, but seems to be a common M.2 ssd to use. There's nothing from Crucial updating... so it would be their responsibility to patch? That's fine, just trying to figure out who to bug about fixing this. For now, I've set the HDD light to SW Control.

That is correct, in this case, the manufacturer of the SSD should release a firmware to fix any possible compatibility issues.
