Hi
I just recently purchased a NUC9I7QNX1 and I would like to enable legacy boot in BIOS but the option is greyed out.
How do I get it to not be greyed out so I can enable it?

AFAIK, you can't; Legacy Boot is not supported (BIOS has no CSM to support Legacy modes).

For more information regarding which NUCs support or do not support Legacy Boot, consult this page: https://www.intel.com/content/www/us/en/support/articles/000057401/intel-nuc.html.
