I've never used a NUC before, I have been learning as I've been dealing with this process. I have acquired a second hand nuc6i7kyk (I know its a decently dated model but I still have a use if it can display.) It still worked when I got it but wouldn't display any signal, I personally have never seen any output from this device.
I'm not well experienced, so if anyone can correct me or help me out it would be much appreciated, but I have tried moving the ram and the SSD around, I have since wiped and reinstalled both windows and Linux directly on the SSD. The only thing I haven't tried is a different display port other then the HDMI, but I also acquired two of these things and they both have this same issue so I'm not entirely sure that's it. This has landed me at the conclusion of bios settings which I don't know how to access right now, and from what I could find on Intel's website it looks like they don't support these anymore.

1. To enter BIOS you need click on F2 when you see the Intel NUC logo. While in BIOS, click on F9, followed by "y" to set the BIOS to default settings. Then click on F10, confirmed with "y" to save BIOS settings and exit to Windows.
This video is generated from BIOS in the memory. So, if you don't see this logo, probably your NUC is nor running. Can you describe the Power LED indication? Do you hear the Cooling Blowers?
2. Try to power ON your NUC with minimum hardware configuration: remove the SSD and leave only one SO DIMM (check both slots).
3. If still your NUC is not powering ON, the reason for this may be depleted CMOS battery. In order to check/replace this battery you need to remove the NUC board, since the battery is located on board upper side. This video may show you how to do this.

What memory and storage have you installed in these NUCs?
When you press the power button, do you see flashing on the power button LED?
