I need to get a new ISP now ... should I ask for Ethernet hookup and skip Wifi?

I'm not sure that I understand the question. The ISP provides internet access to customers using fiber optics, cooper wires, satellite, mobile or different forms of communication. This connection is usually provided to your modem/router. Your NUC can be connected to your router (and Internet), trough wired Ethernet connection or using WiFi. If you are using Wifi connection now and it is working good for you, no need for change the method of connection to router. Only your router settings need to be changed to connect to the new ISP.
Any way, my main NUC computer is connected trough Ethernet connection, which I prefer as boeing more resistant to interferences. At home, I have other NUCs connected trough WiFi. So, if you can ask for Ethernet hookup and it can be done easy, you may ask, to have more possibilities.
