We have two nuc 8I7HNK's running 3 display setups in one of our office meeting rooms. We turn the displays off every night and in the morning when turning them back on we find the machine freezes displaying the desktop on 1 or 2 of the displays and a blank screen on the others. We have tried re-installing windows 10, updating to the latest bios/graphics drivers etc but the problem persists.

In order for us to provide the most accurate assistance, we just wanted to confirm a few details about your system:
Is the same issue happening on both of the Intel® NUCs?
Was it working fine before?
Did you make any recent hardware/software changes?
When did the issue start?
Did you run all the Windows* updates?
What is the model of the 3 monitors connected to it?
Which video ports are the ones that you are using, please describe the configuration?
Are you using adapters or converters? If you do, please provide the model of them.
When you say that you turn the screens off, you mean you turn them off with the power key or you disconnect them from the Intel® NUC or from the outlet?
Just to make sure, in the following link you will find the latest BIOS version for the Intel® NUC NUC8i7HNK which is 0058, is that the version currently installed?:

You mentioned that the Intel® Graphics drivers are up to date, in the link below you will find latest Intel® Graphics version 26.20.100.6912:

And then please install the latest Radeon™ RX Vega M Graphics driver version 18.12.2 :

If the problem persists with that driver, for testing purposes we can also try to install Intel® Graphics driver version 26.20.100.7000:

And then install the Radeon™ RX Vega M Graphics driver version 25.20.15002.58:

I will suggest to turn OFF the NUCs over night, rather then turning OFF the displays. It is much better for the system and every morning the NUC will be initialized again. It takes less that 25 seconds to NUC be ready again.
