I have an Intel NUC 12 Extreme and the PCH temperature in the BIOS on boot is always above 105 degrees. This seems high to me. Is it a cause for concern?

This is somewhat normal; it all depends upon how long you have spent in BIOS Setup. While in BIOS Setup, the processor has all of the its power management features disabled and code is being executed constantly, in a hard loop, polling for USB, keyboard and mouse input. You should always do your temperature measurement in the runtime (Windows, Linux, etc.) environment, where most, if not all, Power Management features are enabled. Establish the baseline temperatures while Windows has been idle for, say, 15 minutes.
