I am running Ubuntu Server 18.04 on my new NUC and it does not have a GUI console, just text. I've found several ways to adjust the HDMI when X is running but nothing for a straight text console. The problem is overscan such that the outside edge of the text screen is painted off the screen and is hidden. The most annoying is that the last line and the first few columns of text are missing.
Is there any way of adjusting that?

Allow me to share with you that Intel does not test and validate Intel® NUC on UBUNTU, however, we know that a lot of NUC owners are using it successfully on many different UBUNTU distros.
Intel suggests you check your UBUNTU distros website and forums at https://community.ubuntu.com/ https://community.ubuntu.com/ for peer assistance with this issue with the proper set of commands your install the GUI on your operating system.
Also, let me share with you the following link whit information of the supported operating system for the Intel® NUCs.
