I read that you could install ubuntu on intel nuc8i3beh, is that correct? it also possible to do a SSD caching by combining ssd and hdd?

Ubuntu is not a supported operating on the nuc813beh:

Only Windows 10 64-bit is supported.

Linux is not supported by Intel on this NUC. It doesn't mean that you can't install it, just you will not get any support from Intel, since this O.S. wasn't verified by Intel and neither any drivers are not release from Form Intel.
