I've tried all the three ways (msi, F7, F2).
Each time, freeze.

First, MSI : nothing happens
Second : I strike enter : nothing happens...
Third : I click Yes : you know what ?... nothing happens.
I need to update BIOS because the audio doesn't work
(like https://forums.intel.com/s/question/0D50P000049Y7gVSAS/nuc8i7beh-cant-install-drivers?language=en_US)
Other problem I'd like BIOS could solve : When I shutdown... then blue light stays powered... I need to press it 5 seconds to set the power off.

if it could help somebody, I reseted the BIOS with the jumper.
After doing it, the update worked !

- You did OK recovering your bios with Security Jumper removed.
- About your other problem - "When I shutdown... then blue light stays powered... I need to press it 5 seconds to set the power off." This is normal operation for your NUC. If you depress the Power Button (while the NUC is ON), for less 4 seconds, the NUC enters Soft-Off/Standby state. If you hold the Power Button depressed for mor than 6 seconds, NUC will go to Fail safe power Off state.
- If you want your NUC to go to OFF state after short depressing on Power Button, you should define this Windows Power Settings. System>Power & sleep > Additional power settings (on right side)>Choose what the power buttons do - set When I press the power button to Shut down
