On compatibleproducts.intel.com: NUC8i7HVK I see only:
- Linux Mint
- Microsoft Windows 10
I found it works on:
- Debian 10 (buster)
- Linux Mint 20.1 (Ulyssa)
- Debian/testing (bullseye)

It boots on FreeBSD, but only in text mode.

I'm sure that's just because you can't really test every distro out there, but anything reasonably modern with a >5.* Kernel and Mesa >20.* w/RADV should work absolutely fine with the Hades Canyon.
I run Solus 4.2 myself as my daily driver without any issues.

Maybe my question should have been how the Compatible Products for NUC8i7HVK can be updated.
Machine works fine.
I can also add Qubes OS to the list.
