I have a different OS on each of my two m2 SSD's. Legacy boot should provide some way for me to distinguish between the two SSDs - to know which contains which OS. This could be a rename or description field perhaps. Perhaps there is an option that I have missed?

In this case, the UEFI BIOS of the NUC will only show the name that the manufacturer of the SSD gave it. You can change the name of the SSDs from the OS and check them from there as well.
