I set up a new NUC8i7HVK yesterday and installed Windows 10 Pro v1803. Looking at https://downloadcenter.intel.com/product/126143 there's an awful lot of drivers/software available. Does Win 10 pick up the proper versions automatically or do I need to download and install the Win 10 stuff? If it matters, I have a Samsung 970 EVO 1TB NVMe M.2 as my boot drive and a Intel 660p M.2 2280 2TB NVMe as my data drive. I'll be using both HDMI ports, Bluetooth, USB, and both audio jacks.

First, you should upgrade to Windows 10 version 1903 now.
No, windows does not pick from this list.
What you should do is to install the intel driver and support assistant.
https://www.intel.com/content/www/us/en/support/detect.html
It will tell you what you need to have installed, and install it for you (if you want).
