Hello, ive been searching for a NUC which supports a 5k resolution. Ive picked two out.
First is NUC8i7HNKQC and the second one is BOXNUC8I7HNK2
As far as i understood it, its possible to let them run on a 5k resolution with the thunderbolt 3 connection. Is that true?
Are there cheaper variants aswell?

In reference to your question, yes, both of those, the Intel® NUC NUC8i7HNKQC and the Intel® NUC Kit NUC8i7HNK support the 5K resolution, they are actually the same, is just that one model, the Intel® NUC NUC8i7HNKQC came with everything install, including OS and SSD/HDD, the other one, Intel® NUC Kit NUC8i7HNK is a kit, where you will need to purchase the memory RAM and SSD/HDD for it.
In the following link, you will confirm that the Intel® NUC support the 5K resolution, but there is a requirement, you will need to use two monitors for that resolution to become available, here you can verify those details, page 20:
Regarding the question of Intel® NUC variants, the Intel® NUC Kit NUC8i7HVK also supports the 5K resolution under the same condiations, page 22:
