Regarding your questions, it is important for you to know that the Intel® NUC Kits are sold without any type of RAM or storage devices, they must be bought separately; instead, there is the Intel® NUC Mini PC that will contain them. In addition to that and based on your requirements, I made a comparison list with both Intel® NUC 12 Pro Mini PC NUC12WSHi7 and NUC12WSKi7 as they are the closest units to meet your requirements. Unfortunately, all the Intel® NUC Mini PC from the 12th Gen comes with Windows 11 as their Pre-Installed Operating System. There are no Windows 10 options. Here is the comparison list for all the Intel® NUC Mini PC from 12th Gen, where you can see the Operating Systems installed in each system:
