how to connect one?

Yes, as Scott mentioned you can use the build in Digital Microphone Array. See para. 2.2.4.11 on page 58 and figure 22 on page 80 in Technical Product Specification https://www.intel.com/content/dam/support/us/en/documents/mini-pcs/nuc-kits/NUC7i5BN_NUC7i7BN_TechPr...

In order to use this microphone it should be enabled in Bios Advanced>Onboard Devices. In addition it should be assigned as default recording device in Windows Audio Panel.

Your nuc does have a mic input. Look at page 31 of the technical specification:

Actually, the BN NUCs all have built-in stereo microphones; you do not need an external one.
