When sharing screen from a Chomebook, only a white screen is shown. See attached pic. I've narrowed it down to being an issue with Chrome v89. Chromebooks with Chrome v88 or lower do not have this issue. Initially I was using version 4.0.4173.30 on the server and hub. Updating those did not resolve issue.
Intel Unite Server v4.2.25031.51
Intel Unite Hub v4.2.25031.51
Client: Intel Unite app v4.2.0.35
Chrome version with issue: 89.0.4389.116
Chrome version 88.x and below work as expected.

Also - All of our Windows clients have not issues sharing either.
