How To Select The x86 Intel 64 Processor Opering Mode When Developping A Program ? (Protected.../Real-Address/SSM/Compatibility/64BIt)

Good Afternoon,

reading the x86 - Intel 64 Processors Software Developer Manuel, I

would like to know how one can select the processor operating Mode

(Between Protected Mode, Real-Address Mode, SSM Mode, Compatibility Mode, 64 Bit Mode)

when developping a program ?

Moreover, how can one choose the memory model to use ?
