How do i get started with intel soc cpus?

So i want to use an atom cpu to try it out, so i can then is it in a project of some sort. As you can probably tell i'm not very experienced in intel atom cpu. Which one should i pick? How do i get started? And how do i get it to run some operating system? thanks.
