I'm in the market for a new macbook but can only afford refurbished models. Would it be better for me to buy a older model with i7 processing or a newer model with i5 proccessing? I use my macbook to for logic pro x and music making i also use it for post production and sound design

This depends upon the processor generations in question. You will have to be more specific in your question.

You will get better performance by purchasing a newer i5. Older i7's were 4 cores with 8 threads. Newer i5's are either 6 cores and 6 threads or 6 cores with 12 threads. The i5 9600K achieves better performance than the i7 7700K, and the i5 10600K achieves better performance than an i7 8700K. Intel chips have changed a lot over the past few years.
