Intel Desktop 500 series Chipset specification page does not mention VT-d support, whereas same is clearly mentioned for 400 series Chipset.
Can I use motherboard based on e,g. B560 along with I5-11400, for VT-d, PCI passthrough like feature. I looking for economical desktop combination to learn and practice virtualization including SR-IOV.

Any guidance is appreciated.

Support for VT-d is clearly mentioned on page 15 of the Intel® 500 Series Chipset Family Platform Controller Hub (PCH) Datasheet, Vol. 1.pdf.
As well, support for VT-x is clearly mentioned on page 45 of the 11th Generation Intel® Desktop Core™ Processor Family Datasheet, Vol. 1.pdf.
This search lists the SR-IOV documentation on Intel's web site: https://www.intel.com/content/www/us/en/search.html?ws=text#q=SR-IOV&t=All.
Based upon these findings, I would conclude that you are good to go.
