If I do not select ECC for the memory controller can I use the 8 ECC bits as data bits. Therefore my data bus width will be 72 bits instead of 64 bits plus ECC?

I'm pretty sure the DDR4 that comes with that kit is only 64 bits, so I'm not sure what you could do with a 72 bit bus.
But sure, you can set that up if you want.
