My guess is that you are using the App Framework UI framework. It's default behavior is to "go native". I'm not sure that each simulator correctly supports that.
If you want it to appear "natively" on each platform, I recommend just testing it on some real devices and make sure you are happy with the result.
Otherwise, use the "Theme" control in App Designer and choose a specific theme. That'll override the default behavior.
