Using Intel Data Migration Software to replace M.2 C: drive with a new INTEL M.2 drive will not work

Laptop has ONE M.2 slot (of course). I ordered a new Intel 660P M.2 drive. However, the data migration software will only run if the intel drive is installed. Since I obviously can't have BOTH M.2 drives installed at the same time, it won't run.

I would like to image the current non-intel C: drive to my SATA drive, install the new intel M.2 and then restore the image to this intel drive. What's the recommended approach?

Easiest is move old M.2 drive to a M.2 USB adapter and install new drive in the laptop's M.2 slot. The software will then support moving the partition from the old drive to the new drive. USB M.2 adapters are fairly cheap.
