Windows 7 is dead.
Do you really think that win 8 or 10 is an acceptable replacement for Win 7 ?

It does not matter what I think. What matters is what is supported, and windows 7 is not. Now, you can continue to try and hold out, carrying some banner to say you are a Windows 7 die hard, or you can accept reality. In the meantime, you are unsupported, missing out on features and advancements and security, and falling behind.
So, the choice is yours.

Hello UUser13
Thank you for posting on the Intel® communities.
We would like to mention that the information provided by the community is correct and only Windows® 10 64-bit is supported for the Intel® Wi-Fi 6 AX200. You can verify this information in the following link:
Supported Windows Operating Systems for Intel® Wireless Products
https://www.intel.com/content/www/us/en/support/articles/000005602/network-and-i-o/wireless-networking.html
Also, it is worth mentioning that the Intel links you shared regarding Intel® PROSet/Wireless Software and Drivers for IT Admins relate to different Wireless Adapter models. The driver zip packages for Windows® 7 and Windows® 8 are supported for previous models of Wireless cards that are listed at the bottom of the webpage, for instance: Intel® Dual Band Wireless-AC 3165, Intel® Dual Band Wireless-AC 7265, etc. Those Wireless cards do support Windows® 7/8.1 so the zip packages are only intended for those Wireless models.
Also, from the "Intel® PROSet/Wireless Software and Drivers for IT Admins" download webpage, you can check the Release Notes, where it is detailed the specific supported operating systems for each Wireless model and driver versions. Refer to "Supported Products and Driver Versions"
https://downloadmirror.intel.com/29249/eng/ReleaseNotes_WiFi_21.60.2_IT.pdf
We hope this clarifies your inquiries.
Note:
Since we found you have another thread regarding a similar inquiry about the previous version of Windows® supported on the Intel® Wi-Fi 6 AX200, we have proceeded to close the other thread in order to avoid duplication of effort.
