If your Dell PC has two DisplayPort outputs, I would recommend connecting the two monitors with a DisplayPort cable each to have a straight connection. And please then set up the monitors in the On Screen Display menu as follows:

I believe that's how I have it setup. I have two DPs. Each monitor is connected with a DP to HDMI cable. If that's not the same, can you break it down simpler for me?

Please use cables that have a DisplayPort connector on both ends.

Have you verified that the firmware for the DP-to-HDMI cables is the latest? If it's not, I would be updating it as this would be the usual cause of HDMI connection loss issues (which is what you are seeing).
[Aside: I don't recommend purchasing DP-to-HDMI cables that do not have the ability to have their firmware updated.]

Every one of these cables has a processor that is performing the protocol conversion from DisplayPort to HDMI and most of these implement this protocol conversion using embedded firmware. It is a question of whether or not a particular cable has a method for updating this firmware and is making firmware upgrades available as issues are identified.

Understood. These are from a company called UNI. From amazon. How would I know/confirm that the firmware could be updated?

I went to their site (https://uniaccessories.com/) to check, but didn't see any support for firmware download/upgrade. You could try contacting their tech. support and see if they have any guidance for this.
